Ingredients Serves 2/3
½ cup of quinoa
1onion, diced
2 Cloves of garlic crushed
2tablespoons oil
1Stick of celery chopped
1 sliced carrot (1/4-inch thick)
1pepper cut into 1-inch pieces
1⁄2 courgette cubed
2cups plum tomatoes
2teaspoons ground cumin
1⁄2teaspoon chili powder
1teaspoon ground coriander
1pinch cayenne
2teaspoons of fresh oregano
1cup vegetable stock
Directions
Rinse your quinoa really well.Saute the onions and garlic in the oil for about 5 minutes over medium heat.Add in the celery and carrots. Continue to cook for about 5 more minutes, stirring often.Add in the bell pepper, zucchini and tomatoes, along with the spices (cumin, chili powder, coriander, cayenne and oregano). Let that blend together for just a few more minutes and then stir in the stock then add quinoa Cover and simmer for about 15/20 minutes until the quinoa and veggies are cooked.
