Ingredients (1/2)
1 cup quinoa
Pinch of salt
2 cups nonfat milk
3 tablespoons of maple syrup
½ zest lemon
1 cup blueberries
2 tablespoons of flaked almonds
Directions
Rinse quinoa (sieve) in cold water to remove bitterness. About two minutes
Heat milk in saucepan until warm then stir in quinoa and add salt. Simmer over medium heat, basically until all the milk has been absorbed, 20 minutes more or less. Remove the saucepan from heat and add maple syrup lemon zest and half the amount of almonds. Mix ingredients then add blueberries and fold (keep some back for sprinkling at the end if you wish) place into bowls and finish off with rest of almonds and berries.
